Two very interesting developments to report concerning food. The first has gotten reasonable coverage in the newz. Apparently the multinational corporations selling us our dessert are offering us less for the same price.

There's a reason why the tub of ice cream you bought last week looks a tad smaller than ones you bought last summer. It is. Many major ice cream makers, hit by higher dairy costs, have shrunk their standard containers to 1.5 quarts from 1.75 quarts, about 1 cup less.

Check your freezer. I did and found what this article suggests, that what I thought were half gallon containers of ice cream were really 48oz of chocolate and 54oz of vanilla, neither of them 64oz which would equal one half gallon. And it’s not just ice cream.

General Mills began downsizing cereals last June. Some boxes of Cheerios and Wheaties shrank as much as 1.5 ounces. "Prior to the change, our package sizes were larger, in many cases, than competitors'," spokeswoman Heidi Geller says.

Apparently they think you should pay the same amount for less because their competitors sell you less. I love the logic. And companies are being sneaky about it. Here’s another example.

Two packages of soap with the same wrapper, pulled right off the same grocery store shelf and selling for the same price didn't look different at first glance. After a closer look, the older package is three bars of four to five ounces of soap and the new package is three bars of four ounces of soap. more…

The Agriculture Department proposed today to reduce the amount of food served to children receiving federally subsidized lunches in schools throughout the country.

The proposal would abandon a goal set at the program's inception 35 years ago: to serve lunches that give children one-third of the recommended dietary allowances for a variety of nutrients. The new rules do not set firm or precise overall nutritional goals.

Lynn Parker, a nutritionist with the Food Research and Action Center, a nonprofit, public-interest law firm, said that the proposed changes were significant because many children from low income families depended on school lunches for one-third to one-half of the nutrients they consumed in a day.

Nutrition specialists said that even children from more affluent families did not always receive nutritionally sound, well-balanced meals at home.

As schools reopen this month, ''people will be paying more for school lunches and getting less,'' said Mr. Matz, who represents the American School Food Service Association. He said that the Federal Government was ''balancing the school lunch budget by taking food away from children.'' more…

That folks, is evil at work. We’re fighting a war we entered into based on false premises that is costing US tax payers more than 10 billion dollars a month. But we need a balanced budget so let’s take food away from children. Wow.

The other item of interest is the wink and nod game going on over the economics of food. According to the U.S. Census Bureau U.S. retail and food services sales for the May through July 2008 period were up 2.7 percent from the same period in 2007. So yea! for the growth economy, food sales are up! But wait a minute. They aren’t talking about units of food, they’re talking about dollars of food. And we all know food has gotten more expensive. So if food is more expensive are we really buying more or just paying more? George Ure has already explained it very well so I’ll share a bit from his website.

Say you are set about the task of analyzing milk sales. If you look strictly in a dollarized way, you will be able to report "Milk sales are up 5% compared with last year." Milk was $5.00 a gallon last year, in this example, and is $5.25 this year. "No biggie, just normal price inflation..." you'd be thinking. But, this is dead wrong.


The truth could just as easily involve two variables, not just the one. The unit volume of milks could have dropped 10% an double digit inflation could be at work. Say last year you had 1,000 gallons of milk sold at $5 for $5,000 in sales. But, what happens this year is unit volume was only 950 gallons of milk? You'd still look at $5,250 in receipts for milk, but the price per gallon could have been $5.52 for 950 units, yet as an economist, you could report with a straight face that milk says were up 5% while the unit price was up 10.4%! Ain't life grand?

So companies are packaging small amounts of food to look like the sizes we’re used to buying and charging us the same amount. In the meantime the rising cost of food is making it look like food sales are up and everything is rosy. The truth is tricks and games in the distribution of food are masking the food crisis in America as is arrives.

Let’s be clear. Hunger is never about scarcity. Hunger is about distribution. While talking to someone about food just the other day he said, “You sound like you’re an advocate of food rationing.” To which I replied, “You don’t understand, we already do that. We ration food by price.” If you do one of the jobs in this country that we don’t value, like making clothes or teaching children it’s likely that you’re finding it increasingly difficult to feed your family. 12% of the population of America is food insecure, meaning they don’t get enough to eat on a regular basis. And as a society we tolerate this because we’re told stories about how poor people don’t work hard enough or that if we just tinker around a bit more with the genetic makeup of our crops then we’ll finally be able to grow enough food for everybody. It’s all lies. The American people are willing to work hard to meet their needs. If any of you don’t know hardworking poor people who have trouble feeding their families just let me know and I’ll introduce you to a few. Even easier would be to volunteer at your local food pantry and meet a few of them who live close to you.

And so I get very angry when I read stories about the reaction of food companies to higher commodity prices. They aren’t interested in addressing the issues of resource depletion and energy descent. They are unwilling to make real changes to a broken agricultural system- just as unwilling as our political leaders. The food industry wants to make money on the way down by tricking people into spending the same amount on less. Our leaders in Washington want to take food away from children. And the bankers shout, “Hooray, food sales are up!”

The question is, are there others of you who are angry? I know there are so maybe I should ask are there enough of us? Are there enough people angry at the way we ration food in this country- to say nothing of the quality of the processed stuff we’re eating- are there enough of us to do something about it?

I think there are. When I go to my local farmers market and see the surge in attendance I think yes, we can do something about it. When I see local meat available at my farmers market for the first time in my memory- meat without pesticide residues, hormones, genetic modification, antibiotics, and carcinogenic preservatives- I think to myself that our numbers are growing. When friends show more than just expected interest in my conversations about how our relationship with food must change- when they want rain barrels and raised beds and they want to trade bread for vegetables and eggs- I have a way to balance my anger and frustration with hope in the future. I have hope that we might make a change in the way we eat sooner rather than later.

This spring I helped write a book on the changes we need to make in the way we eat. I also welcomed my daughter into the world. The two are related in more ways than one might first think. The future of feeding looked different when I held the spoon to her lips as she tasted solid food for the first time three nights ago. (She much less messy than our older daughter, so there’s hope there too;-) And as I did so I realized that there is so much work to do. The work we each must do to help our families, our neighborhoods and our greater communities become more food secure is the work of a revolution in eating. Come at it from a place of anger or compassion or with a desire for a healthy, tastier alternative to industrial agriculture. Come at it any way you like but please join the growing group of us who want to make a difference in this world and who think changing the way we eat is a great way to start.

My Commuter Cycle

This is the second in a series of posts I'm writing about the easiest way to cut back on the amount of money you spend on gasoline- don't buy it. Riding a bike has many benefits not the least of which is the low cost of getting around. Recently I wrote about hauling big stuff on a specialized bicycle. In this post I'd like to share my commuter cycle with readers- the bicycle I ride to work and back.

I started bike commuting about a year ago and I love it. Yes I burn less carbon, yes I use less oil and yes I'm in better shape. But the reason I've stuck with it is that riding to work is just so much fun. I started at my local bike shop. The owner helped me put together a great setup tailored to my commute. I ride a Trek 7.6 hybrid. As you can see in the picture above it has:

1) A Straight Bar. This means I ride in an upright position. I see cars and they see me.

2) A Headlight. Inevitably a bike commuter will be out after dark. This light helps me ride safely after the sun goes down or before it comes up.

3) A Rear Blinky Light. Apparently the space program led to great advancements in LED technology. Thanks to John Glenn and gang I have a red light on the back of my bike that blinks and can be seen up to 1 mile from my rear.

4) A Helmet. Safety first.

5) 700c Road Tires. These ain't stubby mountain bike tires. They're designed to help the bike move faster over pavement so I won't be late for dinner.

6) A Rack on the Back. This is key because if you're riding to work, you're going to need to carry stuff. My rack is compatible with my two year old daughter's bike carrier and also with the pair of saddle bags (called panniers) shown in the picture. In them I carry my lunch, a change of clothes and anything else I need for work. On the way home I can stop at the store to pick up anything we need at home.

7) A Bike Lock. It stays in the panniers. It keeps my bike safe when I'm not riding it.

8 ) A Tube Replacement Kit. This also stays in the panniers. With precautions, tube punctures can be minimized but every once in a while I have a flat. A spare tube, the tools to install it and a way to inflate the tube have me up and running again in no time.

9) Toe Clips or Clipless pedals. Using these will helps me better leverage the full power of my legs. It helps me get to work and back faster..

10) A Water Bottle Cage. This will helps me stay hydrated.

11) A Computer. OK this isn't necessary but it is nice to see how fast I'm going, how far I've ridden and to track my progress as a cyclist.

12) Bar Ends with Built-In Rear View Mirrors. These help by giving me another position for my hands and also by helping me to see what's coming up behind me.

Depending on what your particular commute looks like your needs will vary. That's why I recommend visiting your local bike shop to help get you started. If your commute is less than 40 miles round trip commuting on a bicycle is really possible. Give it a try.

peak energy and what that means for food

Imagine my shock this morning to open up the headlines and find that a barrel of oil now sells for more than $130 US. It seems that everywhere I turn the concept of peak oil is entering into the American mainstream. I turned on the radio only to hear Michael Klare, author of Blood and Oil: The Dangers and Consequences of America’s Growing Dependency on Imported Petroleum as a guest on my local NPR radio program talking frankly about oil and energy issues and just how bad the problem really is. Just a few days ago a good friend, long involved in reducing his families carbon footprint and becoming more self-sufficient, emailed me to say he was deeply trouble to have recently discovered the depths of our energy problems and was frightened by what peak oil might mean for his family and our nation. I told him he should be careful about lengthy readings of Heinberg, Kunstler and Savinar all in one week. ;-)

And after years of organizing my own local screenings of the documentary 'The End of Suburbia' I was asked last week to come and speak after another such screening was organized by political types in my town. This time my thoughts were met not with denial or even much anger but with an odd acceptance. Surly a threshold moment is fast approaching. Shock is what many more will experience as the rising cost of oil and gasoline generates awareness. To be sure those of us involved for any length of time with the issues of peak oil are enjoying an ascension to normalcy as the rest of our country wakes up.

So this morning I'm going to post a peak energy introduction written with Sharon Astyk. This will be a review for those who follow her site and mine but might serve as a place to point those who are interested in learning more. It's very important however that those of us more comfortable with this topic help to shape the emerging conversation as one of opportunity not tragedy. No doubt this will mean doing things differently now and in our future but all is not gloom and doom. This could be an opportunity to address big problems- a catalyst for positive change. With that in mind we must frame this not as 'the end of the world' as my wife joking refers to all discussions peak oil in our home, but as the beginning of something better.


PEAK ENERGY

Brewing beer takes about thirty days. There’s the malting and mashing and lautering and boiling, not to mention the hopping and the separation, the cooling and fermentation. Then most beer is filtered before being bottled. And let’s not forget the drinking. Beer has been brewed since the 7th century BC, or perhaps even before, and will probably be brewed until humans no longer walk the face of this planet. As a Whistran Brewery sign describes it, “Beer: So much more than just a breakfast drink.”

The above description makes it sound like an awfully complicated process, but really it’s not. But the procedure does requires adding specific ingredients, including heat, in just the right sequence so as to produce one of mankind’s most beloved beverages. In this way brewing beer is not unlike the process of making oil. A long time ago, a tremendous amount of oceanic plant material lived and died and floated to the bottom of the sea. There it built up into an enormous layer of biological material. Like brewing beer, this process required the combination of specific ingredients in the presence of heat. At lower temperatures it produced oil and at relatively higher temperatures it produced natural gas. In certain locations the oil and natural gas became trapped in porous rock formations conducive to the containment of such materials. You can think of these formations as kegs of energy.

During previous millennia, before we discovered how to make use of these intense energy sources the human population was relatively stable, never exceeding several hundred million. During our most recent experimentation with fossil fuels however, we’ve seen that number increase to just over 6.5 billion people. . Even more important than the growth in population, oil has enabled lavish, consumptive lifestyles in the Global North, so that inequity between rich and poor has grown. The average American consumes 30 times the resources of the average Kenyan.[i]

During the middle part of the 20th century, the United States was awash in oil. Germany, on the other hand, was so desperate for similar fuel that they were forced to take coal and press it into gasoline. Many historians point out that our victory in the World War II was made possible, in part by our easy access to great quantities of oil and it’s abundant energy. Winston Churchill famously said , “”Above all, petrol governed every movement.”[ii] Following World War II, the United States began to utilize this incredible resource at home. James Howard Kunstler, author of “The Long Emergency”, describes America’s domestic use of fossil fuels this way.

“It is no exaggeration to state that reliable supplies of cheap oil and natural gas underlie everything we identify as the necessities of modern life — not to mention all of its comforts and luxuries: central heating, air conditioning, cars, airplanes, electric lights, inexpensive clothing, recorded music, movies, hip-replacement surgery, national defense — you name it.”

Most of us are familiar with regular gasoline fill-ups and the need to drive back and forth from work to home, from the shopping mall to the elementary school. Cheap fuel made easy motoring typical of American life. And although that has begun to change with rising energy prices, we’ve barely begun a great shift. Imagine for a minute how hard most Americans find livingwithout a car. But aside from this most obvious of petroleum uses, there plenty of other ways we use oil in our everyday lives.

It is inevitable when you fill up a mug with beer and begin to drink it that eventually you will reach a point at which your glass is half empty. If you go out with friends to a bar, you are more likely to order a pitcher of beer for all of you to share. Now imagine that around the time that you have drunk half of it, someone announces that it is the last pitcher of beer in the whole world - that we’re all very sorry, we thought we had more, but everyone in the universe has looked in their fridges, and the beer is all gone forever. So now you have half a pitcher of beer and that’s it - no more. Now, what do you do? Do you drink it fast, and have one incredible party, and never drink again? Do you sell what is left to people who will pay you a lot for it? Do you horde it, holding on to it at all costs? Do you ration it out so that everyone gets a fair share? Fight over the rest of it?

There’s likely to be a lot of people who want that beer, and regardless of whether you share it out evenly or unevenly, people’s desire for beer is going to be met with smaller and smaller supplies of beer. Now it is possible that we could reduce desire - that if it gets inconvenient enough, that some of the beer drinkers will decide they like lemonade better anyhow. But no matter how many advertising campaigns praise the wonders of lemonade, quite a few of us are going to notice that it really isn’t quite the same thing as beer, the wonder liquid.
Now the nice thing about beer is that it is not required for human existence (ok, we know some people who will argue with us about this). And in a purely technical sense, neither are oil and gas. But just about every part of our life here in America is dependent upon oil and gas, both of which are most likely near the halfway point of availability. As we mentioned above, oil doesn’t just fuel our cars and heat our homes. Virtually everything we buy, from food, to medicine to clothing to tools has petroleum in it as an ingredient. And everything we do has an energy cost. Much of that energy is supplied by oil and natural gas. And there are a lot of people who want what’s left - even as it gets more expensive, and harder to get out of the ground, and there starts not being enough to go around evenly.

And no one really disputes that someday, the pitcher will be half empty. When one examines the life of an oil well it inevitably follows a pattern that looks a lot like a bell curve. In the beginning, as an oil well starts to operate, it easily extracts oil and production rises steadily. At a certain point in the life of the oil well, typically at about the halfway point of its life, the production of the well peaks. All the easily extractable oil has been pumped out and the well is now working harder to extract oil that is tougher to get out of the ground. From this point on, the oil is harder and harder to extract so production slowly declines each subsequent year.

As individual regions and nations peak in oil production, the world as a whole gets closer and closer to the day when the global oil keg will reach halfway and then enter into an era of declining availability. Currently, 54 of the largest 65 oil producing nations are in decline.[iii] Russia’s production just declined for the first time, and Saudi Arabia, while strenuously denying it, seems unable to meet demand. Large numbers of oil company executives have begun to admit we are at or near an oil peak.

As we peak, oil producing nations begin to hold back more of their limited supplies for their own use. Saudi Arabia, for example, recently announced that it planned to reserve energy for future generations. Again, this is perfectly natural - the US, for example, long past its peak exports virtually no oil - but this means that the declines in availability are greater than the declines in production - if production falls by 2%, exports may fall by 4%. If this happens, as is likely, while demand is still growing, the total shortfall in availability may be quite dramatic. This is called the Export Land Model, pioneered by geologist Jeffrey Brown.

Poor industry transparency makes it difficult to say for sure, but there is little doubt that for those of us not currently receiving senior citizen discounts, peak oil will happen during our lifetimes, probably quite soon. It is not unlikely that the peak in oil (as opposed to “liquids” which include unconventional sources) is already past. This fact might turn out to be an event of even greater magnitude than the discovery of oil itself. In America we have built an entire way of life on ever increasing amounts of energy, especially oil, the liquid fossil fuel that powers 95 percent of transportation in this country.[iv] It’s not hard to see that peak oil will have an enormous impact on us as the global keg party winds down.

Natural gas is the other essential fossil fuel response for how we live our lives in America these days. We use huge quantities of natural gas each year to heat our homes, cook our food and take hot showers. Six out of every ten homes in America used natural gas as a heat source.[v] A natural gas production well experiences a different sort of life cycle. Because it is a gas, it flows out at a constant rate. Unlike an oil well, when natural gas production peaks, it then drops off dramatically (think chugging the pitcher). And in much the same way as with oil regions, natural gas regions reach a peak when the majority of the wells in that region reach their individual peaks. Right now the North American natural gas production appears to be approaching peak. Exxon’s chief executive Lee Raymond was quoted in 2005 saying, “Gas production has peaked in North America.”[vi]

When will our global natural gas supply peak? That is one of the most urgent questions of our time and one to which the answer is not known. It’s unlikely however that the global peak of natural gas production worldwide is very far off. Many analysts expect natural gas to peak about a decade after petroleum. It is important to understand that natural gas is much more difficult than oil to transport over long distances, so what matters most to Americans is the North American gas supply. US natural gas supplies peaked in 1973,[vii] but the US has a NAFTA agreement that requires Canada to sell us much of their gas. All North American gas peaked in 2002, and soon that agreement may leave Canadians short of heating and cooking fuel[viii]

But aren’t we making huge new discoveries every day? You hear about them in the news all the time! In fact, most of the discoveries we’re making are very small in relationship to world oil demand, and many of them will take a decade or more to develop. At this point, we’re using 6 barrels of oil for every new one we discover[ix], and oil discoveries have been declining for forty years. As Julian Darley told us in regards to the much hyped “Jack” discovery (which is under 5 miles of ocean) “we’re digging around in the couch cushions for loose change now.”[x]

So it seems very likely that both our global pitchers of oil and natural gas are about half empty. What will that mean for us? A report commissioned by the U.S. Department of Energy headed by Dr. Robert Hirsch states that,

“Oil is the lifeblood of modern civilization. It fuels the vast majority of the world’s mechanized transportation equipment - Automobiles, trucks, airplanes, trains, ships, farm equipment, the military, etc. Oil is also the primary feedstock for many of the chemicals that are essential to modern life.”

So it is not surprising that Dr. Hirsch reports that,” the problem of the peaking of world conventional oil production is unlike any yet faced by modern industrial society.”

Richard Heinberg, author of “The Party’s Over” writing in May of 2006 said,

“Global oil production is peaking-for all practical purposes, now. In the past weeks, the New York Times, Bill Clinton, and the executive vice president of Ford Motor Company (among many others) have stated that world oil flow is at peak. We have even seen one of the major oil companies (Chevron) place ads in multiple magazines and newspapers in order-gently, perhaps, but insistently and conspicuously-to break the news to the American people that the era of cheap oil, and cheap energy in general, is finished, over, done, dead, and gone. And that era just happens to be the only one that Americans alive today have ever known.”

The U.S. Army Corps of Engineers[EAW1] put out a report in September of 2005 that stated, “World oil production is at or near its peak and current world demand exceeds the supply.”[xi] The above-mentioned US Department of Energy-sponsored Hirsch Report says that to deal with the coming peak in global oil production we would need 20 years of devoting virtually all of our national wealth and energies to developing alternative energies and building new infrastructure. The report stated that to do it in 20 years, we’d have to be devoting more of our time and energy than we did to fighting World War II - that is, most of our money, and our time and our industry would all have to be working together to make this giant change in 20 years. Otherwise, there could be major problems - a depression, huge changes in the economy, energy shortages, rationing, rolling blackouts and gas lines, poverty, even hunger. Especially hunger.

So enough with the geology and beer analogies you say. What about food? One of the most troubling ramifications associated with the coming peak in fossil fuels is the roles they play in how we get our food. The model of industrial agriculture used currently to produce much of our food is especially vulnerable to the coming decrease in both natural gas and petroleum availability because it is utterly reliant on cheap energy and fossil fuel derivatives.

Petroleum has made possible the mechanization of much of the labor involved in agriculture. In 1900 roughly 38 % of the population of the United States was actively involved in growing food. By 1950 that number had been reduce to just more than 12 %.[xii] Today less than 2% of the American population does that work. This shift in labor was made possible largely by the harnessing of fossil fuels. Tractors and combines, among other machinery, replaced the human hand in the field. Pumps for irrigation rely on diesel fuel as does the vast network of intercontinental trucking that hauls, on average, each item of food over 1500 miles from where it is grown to where it is eaten.

Petroleum is also the feedstock for the pesticides used to support industrial agriculture and its vast fields of monoculture crops. Seemingly endless landscapes of corn, wheat and soybeans cover Midwestern America and are protected with a combination of chemicals that kill the pests. When you grow a thousand acres of just one type of plant, the bugs that like to eat that plant are drawn to those fields in swarms. Without the ability to fight off enormous numbers of such pests, this system of monoculture probably wouldn’t be possible.

Next there’s the matter of all the nutrients needed to grow our food. We eat an incredible amount corn in our country. A recent Corn Refiners Association study suggests corn is used as an ingredient in almost 4,000 products. This does not include the meat, dairy and eggs that are a derivative of corn used as feed or lots of paper products that include corn.

Author Michael Pollan put it this way in a Mother Jones interview in February 2005.

In addition to contributing to erosion, pollution, food poisoning, and the dead zone, corn requires huge amounts of fossil fuel - it takes a half gallon of fossil fuel to produce a bushel of corn.” To grow the corn on which our current diet is largely based requires providing it with an awful lot of one specific nutrient, nitrogen. The large amount of nitrogen fertilize required to grow corn, is currently created using the Haber-Bosch process of taking atmospheric nitrogen out of the air and putting into a solid state. And this process uses an inordinate amount of natural gas. But as we have already discussed, both natural gas and petroleum are finite resources beginning to enter into a stage of decreasing availability. The short-term effect is likely to be a rise in the cost of our food, especially processed food made from corn. The long-term effect will likely be failure of industrial agriculture to continue to feed the United States and the world.

Taken in isolation, the idea that we’ll prioritize energy for agriculture, or for any one thing or another does make a lot of intuitive sense - as long as we are talking about some discrete, neatly isolated thing. It is easy to think that the reprioritization of resources will be both logical and inevitable - but the problem is that intuitive responses aren’t always right. In actual working systems, there are a host of first priorities, all of them extremely difficult to triage.

The problem is that there are so many highest priorities in any society - do you cut back on police protection? Medicines? Ambulances? Heat for the freezing? Public transport? The transport of relief supplies? Military engagements? In times of radical shortage, prioritizing becomes the struggle of competing priorities, political interests, black markets and a host of other factors, none of which ever quite get what they need

What about renewable energies? Biofuels? Hydrogen fuel cells? The truth is that none of these can replace the energy density of fossil fuels at all. Biofuels, for example, produce, at best, only 1.34 barrels of oil equivalent for every barrel of oil used to produce them.[xiii] That’s not very impressive - oil gives you 30-100 barrels of oil for every barrel used to extract it. And it is possible that the energy return of biofuels is actually much less - that it is negative. David Pimmetal and Ted Paczek have analyzed ethanol, including cellulosic ethanol production and found that they consume more fossil fuels than they produce in equivalent energy[xiv]. And biofuels produce more greenhouse gasses, raise food prices, and essentially put cars in competition with people for basic foodstuffs. If we were to put every single acre of arable land in the US into ethanol production we could run cars for less than half a year. Biofuels have been a disaster for the environment, for the world’s poor, and for the pocketbooks of ordinary Americans who suffer from high food prices.

Hydrogen is a technology that has been “just around the corner” for the last 3 decades, and which shows no signs of getting any closer. It is not, in fact, an energy source at all, but a medium for storing energy, and an inefficient one as well - it is four times less efficient to use electricity to generate hydrogen than it is to just use the electricity directly[xv]

While we support growth in Solar PV panels and Wind production, the difficulty with both of these is the large quantities of reserve capacity, fueled by fossil fuels required to deal with the fact that both are intermittent sources - solar cells only produce energy when the sun shines, wind turbines only when the wind blows. Thus, they both require large quantities of fossil fueled backup capacity - up to 60%.[xvi] Add to this that both remain substantially more expensive than fossil fuels despite rising fossil energy prices, because the comparatively small technological improvements are overridden by the rising costs of the fossil fuels and metals used to make them. [xvii]

While we will almost certainly build out some renewable energy sources, the reality is that our future involves using much less energy than we do now. We have no choice but to cut back radically - and a reasoned, careful, wise reduction will be more just and positive than a haphazard one done by necessity.

All of this makes it much makes it that much more urgent that we get to work now. If we are going to continue to feed ourselves and all the other human being already on this planet without the help of fossil fuels we must begin to make a change now. Yes folks, the house lights are coming up as the partying is winding down. It seems like we might want to sober up before trying to tackle the difficult question of just how best to deal with the problems of peak oil, chief among them fossil fuel based industrial agriculture.

A return to small-scale, sustainable agriculture with a focus on producing our culinary needs and wants locally would reduce our dependency on oil and natural gas in advance of their inevitable decline in availability. One obvious benefit will be the enormous amount of fuel saved by reducing the amount of food shipped all over the country. Fewer refrigerated tractor trailers crisscrossing the country means less oil needed as a nation.

Changes like removing some of the mechanization from our agriculture and reducing or eliminating the use of inorganic pesticides and fertilizers will reduce our dependency on fossil fuels and the foreign countries in possession of the majority of what remains of these fuels. Two thirds of the world’s remaining oil reserves are in the Middle East.[xviii] Much of the remaining natural gas is there too. If we needed a great deal less of their oil and NG to grow our own food, we would be less likely to get caught up in deadly conflicts that require huge amounts of money, energy and worse yet, the lives of our men and women in military service. Imagine if we refocused the amount of money and man power spent intervening in Iraq on learning how to again grow our own food without Middle Eastern oil. We could disengage from a region that obviously isn’t interested in our meddling.

Less oil involved in growing our food will also mean more oil available as feedstock for precious commodities like medical equipment and necessary pharmaceuticals. Rather than a drastic decline in the availability of really important petroleum derivatives, removing the fossil fuels from our food could help us more gradually adjust to decreasing stocks of these fuels. Even more important, the health benefits of a more localized, nutritious diet might reduce our need for medical equipment and drugs.

Making this change now rather than waiting until the peaking of fossil fuels creates more severe social disruptions is important because it will take time to learn how to grow our own food without fossil fuel inputs. And it will take time to learn how to cook with whole ingredients and to adjust to a more seasonal diet. These changes will be much easier if we do them now while we have time to adjust rather than more abruptly in a time of crisis.

confessions of outlaw chickener

The following is a guest post by the outlaw chickener. His name, for obvious reasons, has been withheld.

It been just over four years now since I first hatched the idea of raising backyard birds in my small town neighborhood. I liked the idea for all of its reasons- raising chickens for the fertilizer, the farmliness, the bug control, the cuteness, and of course the eggs. I liked the idea of having my own source of eggs and knowing what went into them- and what didn't- as I scrambled some for breakfast for my daughter. It made me feel more secure and sounded fun; as if I would be a little more responsible for feeding my family and able to enjoy raising some of my own food. There was just one problem with my plan. Where I live raising chickens is illegal.

As a land planner I know all about city ordnances and zoning laws and how they’ve come to shape communities all across America. The process isn’t centered on community gatherings where by city planners and concerned citizens write up elaborate rules to govern the look, feel and touch of their town. No, what happens more often is that municipal officials copy existing zoning rules from other municipalities, make a few changes, offer a public input session or two and largely adopt the documents wholesale without enough consideration of the details. This sort of generic governance doesn’t sit well with me but nonetheless, I read the rules, found that they did indeed exclude chickens from my backyard and decided to inquire about what sort of variance it would take for me to bring birds home legally.

As a long time citizen of my small town I know enough about the politics of my area to understand that if I tried a frontal attack on the establishment I was likely to run up against knee-jerk resistance. Four years ago when I was exploring the idea of backyard chickens, the media, tired of reporting on the 30,000 people who die of regular influenza in America each year, was focusing diligently on the incredibly small number of avian flu cases around the world and offering pandemic predictions about the wildfire of disease that backyard birders in Asia and elsewhere might ignite. Never mind the evidence that it is in fact the commercial poultry industry who is more to blame. The only avian flu outbreak on record in America happened at a commercial poultry operation in Virginia. All surrounding backyard birds tested negative. It’s likely that if backyard birds and small scale chicken raising operations were the way most people got their meat and their eggs, bird flu wouldn’t be nearly as big of a problem. But terror is more contagious than bird flu and I was afraid that fear would outweigh fact in any variance hearing I might attend and that my chances of ever having my own chickens might be gone for good if I approached it in that way.

Still curious, I poked around the periphery of local governance to see what my chances were. I requested an acquaintance of mine to ask all the right people, hypothetically, what the chances were of allowing someone like me to legally raise chickens in the city. The results of my informal investigation were disappointing. I seemed likely to lose any appeal, said my trusty informant, reporting that prominent councilmen and commissioners sounded ready to up hold the letter of the law, which said rather straightforwardly,

No livestock [which includes chickens by definition] shall be kept, maintained or stabled within any Residential Zoning District,” with the caveat that, “The provisions of this section shall not apply to dogs, cats, or other similar household pets.

My plan was already taking shape. If caught, my neighbor’s cockatoo would serve as my main defense.

While I do believe laws like these that summarily dismiss my ability to safely raise certain foods for my family in my very own yard are foolish and out of date, I do understand one of the reasons they have been in enacted. These days they serve as a stand in for neighborly communication. A rule against chickens in a neighborhood takes the place of a good old fashioned democratic meeting where those in favor of chickens debate those opposed. An agreement is reach where by the basic rights of the minority are hopefully protected but the majority vote takes the day. These days though we mostly have mandated rules, heavily influenced by insiders. (You can decide for yourself whether I'm talking here about my city, my state or my country) But I did understand that if I was going to ignore the rules that meant replacing their authority with consent from my neighbors. I talked to each of them and was given permission, emphatically as I remember, with one caveat- no roosters, to which I agreed. My wife wouldn’t allow one anyway.

So having gained permission- in fact whole hearted support- from those who lived around me, I got ready to raise a flock. I did what most new backyard birders do. I looked over the Internet for information on how to raise chickens and downloaded images of clever chicken tractors. I read a few books and talked to a few people. I built a coop, bought a little gear and brought home a few chicks from the local feed store around Easter. I settled in with my outlawed birds.

Now that I've done my best to convince you that I had no choice, that it was way too risky to try and confront the mechanically adopted rules against raising chickens inside my city's limits I should come clean and let you in on another fact. I like being an outlaw chickener. I should not tell a lie. It's fun to be part of an underground movement raising healthy, responsible food and I enjoy all the other trappings that come with keeping city chickens. Something about breaking the rules feels especially invigorating.

Anyone who looks at the food industry up close in this country will undoubtedly come away angry. Sure we've given up our control over what we eat. That is, we were on watch over the years as multinational corporations came to dictate what we eat. But take a spin through the US Farm bill and I can't imagine you won't come away completely pissed off. It's corporate welfare straight from the mouths of a government that seems not to concern itself with the fact that more than 35 million American live food insecure in this country. 72% of the billions of dollars Doled out in the farm bill go to the 10% largest companies growing 5 crops: corn, wheat, soybean, rice and cotton- in virtual lockstep with the processed food industry. And if that's not enough to get you riled up, stand back and take a look at the grocery store, held up as a model of choice. Take a look at the supposed bounty of food we've received in the deal. Here I'm going to borrow from Helena Norberg-Hodge et al because this passage from _Bringing the Food Economy Home_ explains it so well.

"It's easy for Northern consumers to believe that industrial agriculture and global trade have actually led to an increase in food diversity. A well-stocked supermarket can overwhelm with its apparent food choices: fifty different kinds of breakfast cereal: eighty feet of shelving devoted to fruit juices, soft drinks, and other beverages: six different brands of cottage cheese; ten varieties of potato chips...Much of this apparent diversity is illusion, however, since 80 percent of the supermarket that consists of processed foods offers little choice. A close look at several different packages of crackers of canned soup will reveal virtually identical lists of ingredients. In many cases... the only diversity is each one's distinct packaging. ...dozens of apple varieties once may have grown within a few miles of a supermarket that today sells just three or four- those favored by large growers."

Then start to look at all the health problems with the way we eat: the chemicals, the hormones, the antibiotics, the genetically modified organisms not to mention the lobbying by specific sectors of the food industry. Read up on the politics of the food pyramid and you'll realize what a corporate controlled joke that campaign really is!

Whew! Look what I've gone and done- gotten all worked up just writing a little post about being an outlaw chickener and I guess that's my point. Our relationship with food in this country is all kinds of screwed up. At the heart of the problem is people making boatloads of money off of this sick system. And, I might add, sticking it to the farmers who grow food as well. It's enough to make a person want to do something radical, to throw caution to the wind, to purposefully break a law that seems to support this broken system of eating. I promise it is a good feeling to knowingly participate in a counterculture revolution by being someone who knows raising eggs in the backyard is illegal and does it anyway. There is a sense of sanity, a sense of retribution, a sense that I can do it anyway even if the entire system seems stacked against me and my ability to be in charge of my families nutrition. And it feels good. It's also infectious as others talk about my underground operation as if I'm a resistance fighter, and in a way, I am. Plenty of others want to join, even if that only means using some of my eggs. In my town, those eggs are starting to grow a following.

The process of becoming a successful chicken outlaw has been great. Eating great tasting eggs and showing off my hens to delighted small children has been great. I have learned about roosting, about dust bathes, about getting the hen house up off of the ground. I’ve met other people with a passion for raising chickens, I've chased off hawks and I’ve had a few close calls with law. The people in my neighborhood enjoy eggs and I give them away to others in my community too; especially those whose silence is best bought with the makings of an excellent omelet. There’s nothing like good food to keep people quiet.

My yard is certainly too small for a cow and even goats would require an enormous act of marital compromise even Jimmy Carter couldn’t help my negotiate. It is true that there are both proper and improper places to keep animals in our neighborhoods. But those decisions should be made on the basis of meeting the needs of our neighbors and the resources available in any given yard. They should not be based on an aging notion that houses are dormitories where we sleep between shift but rather that our homes can help us become more than consumers. They can help us regain our status as producers and sharers- whole citizens capable of talking and acting in ways that foster self sufficiency and interdependency in our respective communities. I’m looking forward to the day when more people in my town and in others raise more of their own food including their own animals, and can do so without violating superficial laws. Until then I will keep my underground flock in my backyard. I will share eggs with my neighbors who are happy to have chickens near by and I hope to inspire others to do the same- to be prepared and ready to help many more of us raise backyard birds in the future.

Because I think this is really important and because it feels so good, I will remain...

hunger means some business is booming


So it looks like while the price of food is skyrocketing, average farmers aren't exactly raking it in.

"When it's all said and done, we're still making what we did before," said George Zmitko, an Owosso farmer with about 8,000 acres spread across five counties.

Over the past three years, the price for staples like wheat and corn have risen dramatically. While that has made for painful grocery bills, Zmitko and other local farmers say they are coping with price increases of their own.

Fertilizer, for example, has quadrupled from $200 a ton to $800 while diesel fuel is more than $1.50 a gallon higher for farmers than it was a year ago… Costs for buying seed and crop insurance are up, as are the rates for borrowing money to operate a farm.

The net effect? All of that extra money people spend at the grocery store is not going straight into the pockets of farmers.

This is important because it suggests that even if the price of food continues to rise, there is no guarantee that the conventional method of growing food is going to get more lucrative. Amidst rising input prices, a linear system like industrial agriculture might become even more of a seasonal gamble with pricey pesticides and fertilizers- not to mention fuel costs- the ever more expensive 'ante up' on the bet of a big harvest. The article mentions higher interest rates on loans for those inputs and higher insurance premium on crop insurance. That makes sense given the increased stakes. But I wonder, are those bankers and those underwriters also talking to the climatologists?

I'm also wondering just how come all these guys are making tons of money? From the Independent,

The World Bank says that 100 million more people are facing severe hunger. Yet some of the world's richest food companies are making record profits. Monsanto last month reported that its net income for the three months up to the end of February this year had more than doubled over the same period in 2007, from $543m (£275m) to $1.12bn. Its profits increased from $1.44bn to $2.22bn.

Cargill's net earnings soared by 86 per cent from $553m to $1.030bn over the same three months. And Archer Daniels Midland, one of the world's largest agricultural processors of soy, corn and wheat, increased its net earnings by 42 per cent in the first three months of this year from $363m to $517m. The operating profit of its grains merchandising and handling operations jumped 16-fold from $21m to $341m.

It also makes me wonder just where I put my torch and my pitchfork.

what does hunger look like?

Question. What does hunger look like? If you live in America it’s likely you don’t know. It’s true that in the US 12% of our population is food insecure, meaning about 1 in 8 of us don’t regularly get enough nutritious food to eat. But the majority of us don’t see those people or their hunger very often. It’s more likely that most of us associates hunger with a dark skinned and dusty child sitting quietly with flies buzzing about, a la Sally Struthers commercials and her plea to save the children. I’d like to speak for a moment to the politicians, the leaders in this country so that they might get a better idea of what hunger really looks like, because not all hungry people are going to sit quietly and die waiting on someone to send donations.


Haiti’s government fell on Saturday when senators fired the prime minister after more than a week of riots over food prices.


Stone-throwing crowds began battling U.N. peacekeepers and Haitian police in the south on April 2, enraged at the soaring cost of rice, beans, cooking oil and other staples… The unrest spread this week to the capital, Port-au-Prince, bringing the sprawling and chaotic city to a halt as mobs took over the streets, smashing windows, looting shops, setting fire to cars and hurling rocks at motorists.


“It has not been lowered enough,” said a young man who identified himself only as Givens. “If they don’t further lower the price I think people are going to protest more. There will be problems, more unrest. Even the National Palace could be set on fire because we are in trouble.”



[President] Preval reiterated that Haiti could not afford to cut taxes on food because it needed the revenue to pay for longer-term projects that create jobs and boost agriculture.


And here in lies an interesting point. The future is almost certain to mean less energy available and fewer resources with which to grow food, including less fresh water and healthy topsoil. It’s easy to imagine how hard it will be, in such trying times, to launch a cohesive, coherent, top down change in our model of agriculture. Just as it becomes obvious that change is absolutely necessary, those who currently have the power to institute large-scale change will find their power waning. I remain skeptical that even a major change in terms of who holds office will provide the capability of those in political power to significantly cope with the scope of this problem- the growing shortage of a basic human necessity.


Need proof? The World Bank announced today that, “The world is moving towards a food crisis that may lead to wars and riots…” You think? Thank you for such a clear “prediction” of what lies ahead. Of course when asked about hunger around the world and specifically in Africa World Bank President Robert Zoellick suggested, “that sovereign wealth funds around the world allocate $30 billion – 1% of their $3 trillion assets- to investments for African growth, development, and opportunity,” which means he just doesn’t get it. Mr. Zoellick suggests throwing money at the problem. What a novel idea! The problem is we’re eating their food you moron, with our land export model of agricultural commodity production; to say nothing of the food we are burning in our gas tanks, our overly meat-intensive diet.


Ready for the scary part? The resulting rise in price has already caused instability with only 6.5 billion people on the planet. Population projections point to more than 9 billion people by the middle of this century. The people of the African continent don’t need to grow their economies and develop as Mr. Zoellick suggests in order to feed themselves. To be sure there is ample room for a rise in the standard of living of the average African but what they need more than anything is for us to stop acting like we’re somehow entitles to more than our fair share of this planet.


ABC ran an article today entitled, Food riots ‘an apocalyptic warning‘. What are they thinking? That’s the kind of headline that could ruin a rich world leader’s day. Because anyone with half a brain must realize that people are not going to just sit quietly and starve in the real world. This is not a television commercial. Recently there have been food riots in Haiti, Morocco, Egypt, Bangladesh, Mexico and in others Countries. Last October the Director of the UN’s Food and Agriculture Organization had this to say. “If prices continue to rise, I would not be surprised if we began to see food riots.” There’s at least one leader who saw this coming. But the rest of them, and to be fair many of us, haven’t given much thought to the day when our gluttonous eating habits might bite back. Because of our abusive attitude towards our environment and its resources, which we have taken for granted, that day might be arriving shortly.


But here’s another question. How long until we see food riots here in our country? Do you think the citizens- ur, ah, consumers in this country haven’t noticed the rising price of everything, including food? Do you think we still believe in the stupid core rate of inflation thingie that doesn’t include the cost of food, let alone the cost of the gasoline needed to drive to the store and buy that expensive food? The following is from Forbes (that leftist, conspiratorial, commie rag)


Kimberly Stevens, a 42-year-old resident of Lewisville, Texas… is also refusing to buy into the official Washington line that the nation’s inflation rate is only 3.4%. This outraged reader says, “As far as I am concerned, Bernanke, President Bush, Clinton, Obama and the rest of them live in a fairy-tale world. They do not go shopping each week and have no idea what the cost of goods is.”


A gallon of the Horizon organic milk she buys for her two boys has soared from $1.99 to over $5, an increase of 250%. In the past year, a loaf of bread has surged nearly 50%–to $2.29 from $1.59. Her Kraft cheddar cheese has gone from $1.99 to $2.50 for an eight-ounce package–a 25% rise. A dozen extra large eggs are up from 79 cents to $1.19, or about 50%, while ground beef, Stevens insists, is up more than 60%, from $1.79 a pound to $2.99.


Croesus’ source in small-town America doesn’t think “people will be able to afford to go to work this summer” when she predicts gasoline will hit $4.50 a gallon. “My Jeep cost $35 a week to fill in 2005 when we bought it. It is now over $60 to fill. In the past month gasoline has gone up over 75 cents (a gallon).”


The cost of food and fuel for a month are $1,300 higher, “a big hit in a family budget,” she insists. “American people cannot continue to survive and fund our great economy with more and more of our income going to pay to get us to work and home again.”

Please don’t assume I am actually in favor of food riots or that I condone them. I think that form of violence is counterproductive, not to mention a calorically expensive activity! Better to stay home and grow your own. But I’m wondering, as food gets more expensive everywhere, including here in the United States of America, will everyone think like me- that we should have a homegrown agricultural revolution in light of resource depletion, energy descent and widespread political impotency- or will they come for those who play politics while the world begins to go hungry? Perhaps those in charge should stand aside and allow us a more peaceful revolution. We’d like to grow our own food in local communities all over America. And we’d like to work with others all over the world who would like to do the same. When I talk about WWII Victory Gardens people ask me what victory might look like this time? Perhaps it’ll look like anything other than people rioting in the streets over food.

Potatoes! A staple food that isn’t getting ridiculously expensive. Note: They are also ridiculously easy to grow. And don’t forget about sweet potatoes. The good news is I still have sweet potatoes from last year. The bad news is I still have sweet potatoes from last year.

How might the gov’t best assist in food rationing, even if it will never come to that here.

Quick, leak-proof and consumer-oriented distribution of affordable food is critical to our nutritional security in these inflationary times. But a tectonic shift in efficiency will only come when two drivers stop controlling the same car.

And lastly, good news! Brazil might have located enough petroleum to power us for all of 2018!

sprouts beget sprouts

We have a new sprout in the house. As many of you know (because I haven’t posted anything new in almost a month and returning visitors have been greeted with her photo during that period) my wife gave birth to a baby girl in early March. Her name is Salem and we’re quite pleased. Her arrival coincided with the beginning of the planting season here in Southeastern America.. I know that sounds weird for those of you in the Northeast or in colder climates throughout the world but so does the idea of solid water floating down from the sky. What do you call it, snow? Sadly another winter has pasted with almost none of that white stuff and spring is fast approaching here in the South. Officially our last frost free date is April 15th and it’s usually a good idea to get potatoes and onions and some spring greens in the ground early in March. This is made more difficult though if you have a precocious two year old and a new born, even if you have an understand wife. Not to mention the fact that this spring I have the extraordinary opportunity to write a book about where we might ought to be going in terms of growing food and eating it in light of peak oil, climate change and widespread social injustice.

All of this means less time to actually spend in the garden which is a reasonable price to pay for a beautiful new baby daughter and the chance to finish this book with Ms. Astyk. It also got me thinking about all the people who are strapped for time and who might balk at the idea of having enough time to start garden. Now as I’ve mentioned before that there are a considerable number of us Americans who say they don’t have enough time to garden because they spend so much of it watching the idiot box. Just because they call it reality television doesn’t necessarily make it so. Reality will be on display when the world wakes up to our enormous dependency on petroleum, a nonrenewable resource which largely peaked in global production almost three years ago. Reality will settle in as we begin to recognize that burning petroleum (and the other fossil fuels we send up in smoke) is causing unpredictable and potentially devastating changes in our climate. Yes that is the sort of reality that will eventually trump the kind we can flip back and forth from this channel to that eating packaged processed foods and thinking about how well we would do on Fear Factor or American Idol. There is an enormous amount of time we waste in this country every year as we pretend to live by watching other people act out made up scripts.

However, as evidenced by my lack of a television and my still rather busy schedule it seems possible to fill up ones time without the idiot box. It also seems likely that as the growth economy falters under the weight of limited resources and the resulting rise in prices, many people are going to struggle to keep up. I was talking with a friend recently who argued that what we won’t see is a large number of people suddenly starving to death as food becomes more expensive in the US. What we will see is an increasing number of people eating cheaper, less nutritious food. It’s reasonable to expect that more people will try to work more hours to earn more money to be able to buy food as it gets more expensive. This will leave them less time to spend on projects like learning to grow more of their food. I think in part this means helping to share the message that more self-sufficiency means less of an obligation to make money which can translate into less time needed for making money and more time available for even more self-sufficiency.

This requires, as I know from experience, a transition however. One does not simply wake up and stop going to work and instead head off to tear up the lawn to plant potatoes. For a while at least it will be necessary that those seeking a higher degree of personal food self-sufficiency keep one leg in the formal economy and one leg out in the garden. Decreasing dependency on the cycle of: spend time, make money, buy food requires a stretch. And so with that in mind I am using this busy spring season of mine to stretch and to try and feel a bit of what it must be like to try and do lots of stuff and still have time to devote to growing food. IN thinking of how to do this, one idea jumped to mind early on- sprouts. Sprouting seeds in any windowsill takes very little time, a low level of green thumbness and requires a very low level of financial investment. It’s a pretty quick, easy and cheap source of excellent nutrition. So let’s start with that last part.

During the process of sprouting, most seeds because more nutritious as a food source. "Sprouting grains causes increased activities of hydrolytic enzymes, improvements in the contents of total proteins, fat, certain essential amino acids, total sugars, B-group vitamins, and a decrease in dry matter, starch and anti-nutrients." Eating sprouts is actually more nutritious than eating the seeds themselves. This isn’t a reason to give up on legumes but it is interesting to note that sprouts, one of the most nutrient dense foods available on the planet, can be grown indoors on any windowsill by even the busiest of souls.

And as I mentioned above, is doesn’t take much money to start sprouting. All that’s needed is a jar or several jars if the seed sprouting process is to be staggered over several days, making sprouts continuously available. A wide mouth jar will make extracting the sprouts easier. The jar will need a lid that is porous so water can be flushed out without losing any of the seeds. The low tech, super cheap version is a strip of old panty hose stretched over the opening of a mason jar , held in place by a rubber band. Or you can upgrade to a mesh lid that is easier to get on and off, allows rinse water to move more easily out of the jar and is easier to clean. I purchased my jars with mesh lids for about $5 each; not an exorbitant investment.
Next you’ll need a sunny windowsill. It seems reasonable to assume that almost everyone will have one of these. Any seeds to be sprouted will need to be rinsed and then soaked over night. Drain them the following morning and then rinse and drain at least twice a day. That’s it. It is possible to mess up sprouts. You can leave too much water in the jar for too long and the sprouts will rot. You can let the sprouts dry out and they will die, but that’s about all you can do wrong. If you stagger your jars you can keep an ample supply of sprouts around for a consistent source of healthy greens.

And this is important because when I talk to people about food storage there is often a focus on the stables. People naturally focus on storing carbohydrates and proteins and some stable fats. And this is reasonable because it doesn’t matter how nutritious your food is. If you aren’t getting enough calories you aren’t going to have enough to eat to stay healthy and happy. But it’s also important to have a steady source of the vitamins offered by leafy green vegetables. This could be tough to accomplish for those of us accustom to having such vegetables shipped to us in the winter in areas where it is harder to grow such greens with snow covering the ground. It is possible however, to grow a reliable source of nutrients, including those all-important B-vitamins with a low investment of time and money, in any climate. And the seeds themselves are cheap to ship, being dry, and they store for relatively long periods of time. It’s possible to order an enormous amount of nutritious green food for your diet for relatively little money and store it in a small amount of space in your pantry. Sprout when needed.

Now, I’m sure there are at least a few of you thinking, "I think sprouts taste yucky." And this is not just a problem I’m suggest others might encounter. My wife is one of you. Currently she’s a nursing, hormonal mother who is working to keep our older daughter from being, um, overly helpful, which is just another way of saying she keeps her from force feeding the baby carrots, in addition to all the other things she does. This is not a woman to whom I am willing to suggest stuff she doesn’t think she likes to eat; not right now. ;-) The goal instead is to find methods of presenting the sprouts in yummier ways. The task of finding a way to grow nutritious food in a pinch has become the task of finding a way to cook this nutritious food in a way in which my wife and daughter will eat it. Luckily it isn’t illegal to eats sprouts in other ways rather than just on a veggie sandwich. Stir frying them has been my most successful accomplishment on this front although I’m scheduled to try them in a few loafs of bread real soon and next I’ll dry dehydrating them and making crackers. Everyone like crackers right?

I will continue to experiment with different types of seeds for sprouting, different combinations of those sprouts and different ways of using them in meals my family will enjoy. I was excited though that out of a desire to do more to feed my family without investing much time or much money I found another way we can be more self reliant and healthier. This past month, while enjoying the labor of being a new double dad and a bread winner and an author I cast about for a way to quickly grow something good for me, and I remembered sprouts. Even as we deal with the chaos of life at the beginning of the 21st century- peak oil, climate change, small children who’ve learned how to shift the car into neutral- it is necessary to make change even while we deal with the current realities of our world. As we learn how to do so we become stronger, more flexible and more resilient. Imagine what we’ll be capable of when the spit really does hit the fan.
